Ingredients:

  • 1 lb carrot
  • 2 small onions, diced
  • 1 cup white wine
  • 1/4 tsp white pepper
  • 1 tsp salt
  • 1/2 cup heavy cream
  • 1/4 tsp sugar

Directions:

  1. Peel carrots and cut into thin slices (crosswise at a slant).
  2. Place in a saucepan with the soda water, wine, 1/2 t salt and sugar.
  3. Cover and simmer for 25 minutes or until tender.
  4. Meanwhile cut the meat into very thin slices.
  5. Heat the vegetable oil and sauté the onions about 5 minutes.
  6. Add the beef slices; cook for 5 minutes, stirring often.
  7. Season with 1/2 t salt and 1/4 t pepper.
  8. Add the meat and onions to the carrots.
  9. Mix carefully.
  10. Stir in the cream.
  11. Heat through but do not boil.
  12. Correct seasonings if necessary.
  13. Sprinkle with chopped parsley and serve.
