Ingredients:

  • 1 1/3 cups boiling water
  • 1/2 cup butter, soft
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp salt
  • 2 tbsp cocoa
  • 3 tbsp butter, soft
  • 2 cups confectioners' sugar , sifted
  • 1 dash salt
  • 1 tsp tsps vanilla extract
  • 2 tbsp coffee , reserved

Directions:

  1. Reheat oven to 350.
  2. Mix coffee and water. Reserve 2 tablespoons for icing.
  3. Pour over oats and stir.
  4. Cover and let stand for 20 minutes.
  5. Beat butter until creamy and add sugars.
  6. Beat till fluffy.
  7. Add vanilla and eggs.
  8. Add oat mixture and blend well.
  9. Sift together flour, soda, salt and cocoa. Add to other bowl.
  10. Turn batter into silpat 9 inch equivalent pan (or grease & flour pan).
  11. Bake 50-55 minutes.
  12. FROSTING:.
  13. Cream butter and sugar. Add salt, vanilla and coffee.
  14. Beat until smooth.
  15. Frost the cooled cake.
