Ingredients:

Directions:

  1. Beat the butter until creamy.
  2. Add sugar gradually, beating well.
  3. Add egg yolk and vanilla. Beat well.
  4. Add the flour using a wooden spoon.
  5. Drop dough by tablespoonfuls about two inches apart.
  6. Press nuts onto the outside edge of the cookies, leaving the center open.. Cut larger nuts (like macadamias) in half.
  7. Bake for 10 to 12 minutes or until cookies are lightly browned.
  8. Let cool about 1 minute and then remove from cookie sheet to a cooling rack. Let cool completely.
  9. Place chocolate and vegetable shortening in the top half of a double boiler.
  10. Over simmering water, melt chocolate and vegetable shortening. Stir gently until combined.
  11. Spoon 1 heaping teaspoon melted chocolate over the center of the cookie.
  12. Spread over cookie, leaving the edges of the nuts still visible.
  13. Let chocolate set.
  14. Makes about 26 cookies.
