Mirabellan Kuchen -yellow Plum Cake

Ingredients:

  • 125 g fine sugar
  • 2 eggs
  • 1 pkt vanilla sugar
  • 250 g flour
  • 1 - 2 tbsp lemon juice
  • 1 - 1,25 kg mirabellen, or yellow plums

Directions:

  1. Use a 23-24 cm round pan
  2. Cream butter then add sugar and beat well
  3. Add eggs one at a time
  4. Mix flour, baking powder and vanilla sugar
  5. Add to creamed mixture with lemon juice and peel
  6. If too stiff, mix in a bit of water or milk to achieve a dough that easily drops off a spoon
  7. Smooth into a greased and floured cake pan
  8. Preheat oven to 200C
  9. Wash, peel, core and cut up plums
  10. Place into dough all around in a concentric pattern
  11. Bake 30 mins at 200C ( 400F ) then 10 minutes more at 175C ( about 330F )
  12. Cool and dust heavily with sugar
  13. I have not made this and and would decrease the baking temp to 350F instead of 400 initially!
