Minted Peas N Pearl Onions

Ingredients:

  • 1 tsp olive oil
  • 2 tsp sugar
  • 2 tblspn cider vinegar
  • 2/3 cup water
  • 2 cloves garlic - minced
  • 2 (10 oz) package frozen peas
  • 3 tblspns fresh chopped mint . or 1 tsp dried mint
  • 1/2 tsp salt
  • 1 tsp butter

Directions:

  1. In a large non-stick skillet, heat the oil until hot but not smoking, over medium heat
  2. Add the pearl onions& sprinkle the sugar over the onions
  3. Cook, shaking the pan frequently, until the onions are lightly golden, about 2 mins
  4. Add the vinegar & water & bring to a boil.
  5. Reduce to a simmer, cover, & cook until the onions are tender, about 15 mins
  6. Stir in the garlic & green onions & cook, uncovered, until the green onions are just wilted, about 2 mins
  7. Stir in the peas, mint & salt.
  8. Cook just until the peas are heated through, about 3 mins
  9. Stir in the butter & toss until the butter has melted, about 30 sec. longer
  10. Spoon into a fancy dish & serve
  11. NOTE:-
  12. While fresh onions are always best, 2 cups frozen pearl onions can be used in a pinch
  13. To make peeling the pearl onions a little easier, place in a bowl & soak for a few mins in hot water.
