Mint 'n Chocolate Fudge

Ingredients:

  • 1/2 cup butter or 1/2 cup margarine
  • 3/4 cup cocoa
  • 4 cups confectioners' sugar
  • 3 tbsp softened butter or 3 tbsp margarine
  • 1 tbsp water
  • 1/8-1/4 tsp mint extract
  • 1 1/2 cups confectioners' sugar
  • green food coloring

Directions:

  1. Line 8-inch square pan with foil.
  2. In medium microwave-safe bowl place butter.
  3. Microwave at HIGH 1 to 1 1/2 minutes or until melted.
  4. Add cocoa; stir until smooth.
  5. Stir in confectioners' sugar and vanilla; blend well (mixture will be dry and crumbly).
  6. Stir in evaporated milk.
  7. Microwave at HIGH 1 to 2 minutes or until mixture is hot.
  8. Beat with whisk until smooth.
  9. Immediately pour into prepared pan.
  10. Cover; chill until firm.
  11. Spread Pastel Mint Topping (see below) evenly over fudge; chill until firm.
  12. Cut into 1-inch squares.
  13. Cover; store in refrigerator.
  14. Pastel Mint Topping.
  15. In small mixer bowl beat 3 tablespoons softened butter or margarine, 1 tablespoon water and 1/8 to 1/4 teaspoon mint extract until blended.
  16. Gradually add 1 1/2 cups confectioners' sugar and 2 drops green food coloring.
  17. Beat until smooth.
