Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Spray muffin tins with nonstick spray.
  3. Soften diced onion and peppers in 1 tbsp butter
  4. Add spinach, corn, and broccoli and sautee for 2-3 minutes
  5. Beat eggs.
  6. Mix cheese and seasonings into eggs.
  7. Stir in vegetable mix
  8. Pour into prepared tins.
  9. Bake for approximately 30 minutes or until properly set.
