Mini Chocolate Sandwich Bites

Ingredients:

  • 5 tbsp butter
  • 1/2 cup flour
  • 1/4 cup packed brown sugar
  • 2 tsp honey
  • 1/4 tsp baking soda
  • dash of salt

Directions:

  1. 350 oven
  2. Lightly spray baking sheets
  3. Melt butter in a 2 qt. saucepan over medium-low heat.
  4. Remove from heat and stir in remaining ingredients, except chocolate chips
  5. Shape level teaspoonfuls of dough into 3/4 inch balls.
  6. Place on sheets 2 inches apart
  7. With your fingers press into about 1 1/4 inch rounds
  8. Bake 5 to 7 minutes or until golden
  9. Remove to wire rack and cool 30 minutes
  10. Melt chocolate chips in the microwave or over gently boiling water
  11. Spread melted chocolate on bottoms of half of the cookies, top each with another cookie, bottoms together.
