Ingredients:

  • 2 1/2 cups flour
  • 2 1/2 tsp baking powder
  • 3/4 cup margarine or 3/4 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 3/4 cup apple juice
  • 1 cup mincemeat

Directions:

  1. Grease and flour a 10 inch fluted tube pan. set aside.
  2. Stir together flour and baking powder. In large mixer bowl, beat together margarine and sugar until light and fluffy.
  3. Add eggs and vanilla; beat til light and fluffy.
  4. Add dry ingredients to the margarine mixture alternately with apple juice.
  5. Beat with mixer on low speed after each addition. By hand, fold in mincemeat.
  6. Pour into prepared pan. Bake at 350 for 50 to 55 minutes or til done. Let cool in pan 10 minutes.
  7. Remove from pan Cool on wire rack. .
