Ingredients:

Directions:

  1. Dredge meats with flour; shake off excess.
  2. Heat oil and butter in a large saute pan.
  3. Brown meats and remove from pan.
  4. Saute onion, garlic, nuts, seeds and peppers until onion is transparent.
  5. Add tomatoes and simmer until tender.
  6. Remove from heat and cool. Pour into blender or food processor and puree.
  7. In large pot, combine sauce, meats, stock, sugar and spices.
  8. Cook for 30 minutes.
  9. Cut sweet potato into large chunks and add to pot.
  10. Cook for 15 minutes.
  11. Stir in diced apple and pineapple.
  12. Heat through.
  13. Serve with rice and warm tortillas.
