Mediterranean White Fish

Ingredients:

  • 1 1/2 lbs tilapia fillets
  • 1 (14 1/2 oz) can diced tomatoes
  • 1/4 cup white wine
  • 1 tsp oregano
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 tbsp sliced olive
  • 1/2 cup feta cheese

Directions:

  1. In a small sauce pan, combine onions, garlic, tomatoes, wine, oregano, salt, and pepper.
  2. Bring to a boil. Lower heat and simmer for 20 minutes or until onions are tender.
  3. Place fish fillets in a baking dish. Pour tomato mixture on top of fish.
  4. Bake at 350 degrees f for 10 minutes per inch of thickness, until fish flakes easily. Sprinkle olives and feta cheese on top and serve.
