Ingredients:

Directions:

  1. Cut chicken breasts into 2 inch chunks. Add olive oil to medium skillet. Place diced garlic in hot olive oil, add chicken and cook until almost done, maybe 2 minutes on medium high heat. Add mushrooms and stir for a minute. Add the can of diced tomatoes and the chili powder. Cover the skillet and cook over medium heat for 4 minutes. Remove cover and continue to cook on medium heat for an additional 4 minutes. Pour hot mixture over the prepared brown rice and serve with steamed veggies.
