Mashed Orange Yams

Ingredients:

  • 4 -5 yams
  • 3 tbsp butter
  • 1 -2 tbsp honey
  • 1/2 cup orange juice
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Directions:

  1. Preheat oven to 375 degrees. P.
  2. Cut yams in several pieces with a sharp knife and bake until soft, about 50 minutes. Remove from oven.
  3. When cool enough to handle, peel yams and place flesh in a large bowl.
  4. Add all remaining ingredients and mash until smooth.
  5. Adjust seasoning and serve hot.
