Ingredients:

Directions:

  1. Place the mango in a food processor or blender and puree, adding a small amount of water if necessary for smoothness. Measure out 3/4 cup of the puree.
  2. Combine the vinegar and sugar in a saucepan over medium high heat and bring to a boil. Stir to dissolve the sugar and cook for 30 to 40 minutes, until the mixture is reduced and syrupy. Add the bell pepper, onion, ginger, cilantro, mint, and sambal oelek to the syrup. Stir well and remove from heat to cool. Stir in the mango puree.
