Ingredients:

Directions:

  1. In a large heavy saucepan, combine the sugar and cornstarch. Gradually whisk in water until smooth.
  2. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer.
  3. Remove from the heat.
  4. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly.
  5. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
  6. Gently stir in lemon juice and vanilla.
  7. Transfer to a bowl.
  8. Cool to room temperature without stirring.
  9. Cover surface of mixture with waxed paper; refrigerate until cooled. Fold in whipped cream.
  10. Serve with fresh fruit
  11. . Yield: 5 cups.
