Low Carb Mushroom Oopsie Pizza

Ingredients:

  • 2 large eggs
  • 1 pinch of cream of tartar (1/8 tsp)
  • 2 tbsp tomato puree
  • 50 g cheddar
  • 30 g mushrooms

Directions:

  1. Preheat oven to 150C
  2. Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together.
  3. In a separate bowl, whip egg whites and cream of tartar until stiff. You may optionally add a tiny pinch of xanthan gum to hold the shape.
  4. Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.
  5. Spray a pizza tin with non-stick spray and spoon the mixture into it.
  6. Bake about 30 minutes, turning once (until slightly softer, not crumbly).
  7. Let cool for a few minutes, and then spread the top with tomato puree and cover with cheese and mushrooms.
  8. Bake at 180C for 10 mins until cheese has melted.
  9. Can be frozen.
