Ingredients:

Directions:

  1. Finely chop your zucchini and water chestnuts & set aside.
  2. Wash butter lettuce.
  3. Combine turkey, parmesan cheese, & salsa in a bowl.
  4. Once combined, brown turkey slightly.
  5. Add zucchini and chestnuts, also soy sauce.
  6. {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.
  7. Once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.
  8. And - that's it! Easy, quick, healthy & yummy! I top mine off with a little more salsa {Los Pastores is my favorite!}.
