Ingredients:

Directions:

  1. PREPARE SAUCE:.
  2. Mix the egg yolk, garlic, salt and lemon juice in food processor or blender until thick and creamy.
  3. Slowly drizzle one-third of the oil into the garlic/yolk mixture, blending all the while, until the sauce thickens.
  4. Gradually add the remaining oil until all is incorporated and the sauce is quite thick.
  5. Thin the mixture with warm water, if necessary.
  6. Correct the seasoning, adding more salt or lemon juice and a little pepper.
  7. Add the finely grated zest of one lime.
  8. LOBSTER ROLL WITH LIME AIOLI:.
  9. Spread butter on the inside of the pitas and line with two lettuce leaves.
  10. In a small bowl combine the aioli, lobster, celery, arichoke hearts and dill, if using.
  11. Fill the pitas with the lobster mixture.
  12. Garnish with chives.
