Ingredients:

  • 4 eggs
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 1 tsp vinegar
  • 3 cups cake flour
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 oz red food coloring
  • 1 tbsp cocoa

Directions:

  1. In a large mixing bowl, combine eggs, sugar, butter, vegetable oil and vinegar, beat until smooth. Sift together flour, cocoa, and soda, add alternately with buttermilk to egg mixture. Add vanilla and food coloring, beating well. Bake in 4 greased 9-inch round cake pans at 350 degrees for 25 minutes. Let cool completely and frost the cake.
  2. Cream Cheese Frosting.
  3. 1 8-oz. pkg. cream cheese, softened.
  4. 1/2 cup butter, softened.
  5. 1 lb. box confectioner's sugar.
  6. 1 teaspoon vanilla.
  7. 1 cups pecans, chopped (optional).
  8. Combine cream cheese and butter; gradually add sugar. Add remaining ingredients, beating until spreading consistency. Frost cooled cake layers.
