Lime Glazed Roasted Yams

Ingredients:

  • 2 yams peeled and cut into 1-inch pieces
  • 2 tbsp light butter
  • 2 tbsp brown sugar
  • 1 tbsp lime juice
  • 1/2 tsp kosher salt

Directions:

  1. Spray a 9x13 baking dish with canola oil spray. Add yam pieces and dot with butter. Bake in a preheated 350 degree oven 20 minutes to coat with butter. Remove from oven, sprinkle with brown sugar, lime juice and salt. Return to oven and bake 20 minutes longer, until lightly browned.
