Ingredients:

  • 1 lb baby lima's
  • 3/4 tsp basil
  • salt to taste
  • 1 tsp olive oil
  • 2 cloves garlic, pressed
  • 3/4 tsp thyme
  • 1/2 tsp dry mustard
  • pepper to taste

Directions:

  1. Pick beans to discard bad beans, rocks, etc.
  2. Put beans in a strainer and wash.
  3. Pour beans in a large pot and cover with water at least 2-3 inches above the beans.
  4. Cover pot and bring it to a boil; turn it off and let sit for 1 hour.
  5. Add onion, garlic, oil and spices; cover.
  6. Bring pot to a boil; lower heat and simmer until well done and juice thickens or add water if necessary.
  7. Adjust seasoning to taste.
  8. Serve with rice.
