Light Cream Cheese Cornbread

Ingredients:

  • 1 (8 oz) package neufchatel cheese
  • 1 large egg
  • 1 (15 oz) can corn
  • 1 (8 1/2 oz) package corn muffin mix
  • 2 tbsp butter
  • 1/3 cup sugar

Directions:

  1. Preheat oven to 350. melt butter and cheese together just enough to soften.
  2. Mix together all of the ingredients & pour into a baking pan.
  3. Bake for about 40 minutes.
