Ingredients:

Directions:

  1. Mix tomatoes, basil, garlic, salt and pepper with the cooked Soba Noodles. Place in a large skillet, add half of the reserved noodle water and heat through.
  2. Add the Feta Cheese to the noodle mixture and add more of the noodle water, stir until the cheese melts into the pasta and makes a creamy sauce. It really does, believe me !
  3. If you want you can serve topped with a few toasted Pine Nuts, some more fresh basil and some Parmesan cheese. Presentation is Everything !
