Lentil Soup with Tomatoe and Tarragon

Ingredients:

  • 4 cup. tomatoes
  • 2 cup lentils
  • 2 cup onions
  • 2 cup carrot
  • 1 cup celery
  • 2 tbsp. garlic
  • 2 tbsp. tarragon
  • 1 tbsp allspice
  • 2 tbsp ginger
  • 4 cup water
  • 1 salt

Directions:

  1. Heat oil in a heavy pot
  2. Add vegetables and garlic and saute until tender
  3. Add tomatoes/broth/water/ and bring to boil
  4. Add lentils tarragon allspice and ginger
  5. Reduce heat and simmer until lentils are soft and soup reaches the desired consistency.
  6. Add more water if needed
