Lemon Raspberry Yogurt Muffins

Ingredients:

  • 1/2 cup milk
  • 1/2 cup lemon yogurt
  • 1 teasp. vanilla
  • 2 cups flour
  • 1 tbsp. baking powder
  • 1 teasp. salt.... ( or a little less)
  • 1 teasp. lemon peel.... finely grated
  • 2/3 cup sugar
  • 2 cups raspberries
  • 2 tbsp. lemon juice
  • 1 teasp. lemon peel..... finely grated

Directions:

  1. Combine eggs, milk, yogurt, butter, and vanilla
  2. In medium bowl: stir together the flour, baking powder, salt, lemon peel and sugar
  3. Mix the yogur mixture into the flour mixture.. don't over mix
  4. In 2 - 3 strokes, fold in raspberries
  5. Spoon into a greased muffin cups
  6. Bake at 350' F for 18 - 20 minutes or until tops spring back when touched
  7. Serve plain or brush warm muffins with a Lemon glaze

  12. Combine the juice, sugar and lemon peel
  13. Mix until smooth
  14. Brush over the warm muffins
