Lemon Glazed Carrots

Ingredients:

  • 1/2 lb baby carrots (1 package)
  • 2 tbsp butter
  • 1 pinch pepper
  • 1 tsp lemon zest (yellow part of rind)

Directions:

  1. Steam or boil carrots 35-45 minutes.
  2. Melt butter and mix in pepper, sugar and lemon zest.
  3. Keep warm and stir 3-5 minutes or until sugar dissolves.
  4. Pour over carrots and serve.
