Ingredients:

  • 2 large eggs
  • 2 tbsp butter
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest

Directions:

  1. In top of double boiler, beat eggs and sugar, stir in butter, lemon juice and lemon zest -
  2. Cook over simmering water for 10-12 minutes or until mixture reaches 160*.
  3. And is thick enough to coat the back of the spoon.
  4. Refrigerate for up to one week.
