Ingredients:

Directions:

  1. Pre-heat oven 350'F/180'C.
  2. Line a 9 x 5in loaf tin with greaseproof paper and grease.
  3. With electric mixer, cream butter and sugar.
  4. Until light and fluffy.
  5. Beat in egg yolks.
  6. Add lemon rind and juice and stir until blended. set aside.
  7. Sift together flour and baking powder, fold into butter mixture in 3 batches, alternating with the milk. Fold in walunts. Set aside.
  8. Beat egg whites and salt to stiff peaks.Fold into walnut mixture carefully until just blended.
  9. Pour batter into prepared tin and bake until skewer comes out clean, 45-50 minutes.
  10. Let stand 5 minutes before turning out on to rack to cool completely.
