Leek, Mushroom, Chard Soup

Ingredients:

Directions:

  1. Wash and chop leeks.
  2. Peel and grate ginger.
  3. Put leeks and ginger in large pot with 2 T olive oil. Cook until leeks are softening, about 8-10 min.
  4. Clean and chop mushrooms.
  5. Wash and chop swiss chard, separating the stalks from the leaves.
  6. Add mushrooms to pot. Cook until brown, about 3-4 minutes.
  7. Add 2 cups broth and 10 cups water. Bring to a boil.
  8. Turn down heat to simmer, and add swiss chard.
  9. Cook until chard is wilted, 5-10 minutes.
