Ingredients:

  • 2 tbsp butter or 2 tbsp margarine
  • 2 tbsp flour
  • 1 1/3 cups milk
  • 1/2 tsp salt
  • 1 cup sour cream
  • 12 oz spam , cut into strips
  • 1 pinch paprika

Directions:

  1. Cook spinach according to package directions; drain well.
  2. Spread spinach over bottom of lightly greased 13x9-inch baking dish.
  3. Cook noodles according to package directions; drain.
  4. While noodles are cooking melt butter in medium saucepan; blend in flour until smooth.
  5. Add milk, salt, and pepper; cook and stir over medium heat until mixture thickens and boils.
  6. Stir a little hot mixture into sour cream; return to pan.
  7. Add SPAM® and peas or mixed vegetables.
  8. Combine sauce and noodles; pour over spinach.
  9. Sprinkle with paprika.
  10. Cover and bake in 375°F oven 20 minutes.
  11. Uncover and bake 20 minutes longer.
