Lao Stir Fried Clams

Ingredients:

  • 2 garlic cloves
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp oyster sauce
  • 1 tbsp oil
  • 1/4 cup water

Directions:

  1. Soak clams for two hours.
  2. Pound garlic and chillies with mortar and pestle.
  3. Heat oil in wok until hot, and add garlic and chillies and stir fry for a few min until golden brown.
  4. Add clams and stir fry for 3 minute.
  5. Add fish sauce, sugar, oyster sauce, water and stir fry for another 5 minute.
  6. Add basil leaves and serves.
