Ingredients:

  • 3 eggs
  • 1 1/4 cups milk
  • 1 1/2 tsp butter
  • 3/4 cup cubed cheese

Directions:

  1. .cook eggplant in salted water until tender
  2. Makes 2 cups
  3. Beat eggs
  4. Mix in milk.
  5. Add all ingredients
  6. Pour into baking pan.
  7. Top with whole corn flakes
  8. Bake at 350 for 45 minutes.
