Acadia's Eggplant Casserole

Ingredients:

Directions:

  1. Pre-Heat oven at 350 degrees F.
  2. Chop onion into 1/4 pieces.
  3. In skillet add 1 tablespoon of margarine.
  4. On medium-low heat saute onion until translucent (not brown).
  5. Stir frequently.
  6. Add bell pepper and eggplant pieces with onion.
  7. Sprinkle salt over mixture.
  8. Saute until tender.
  9. Spray PAM in 2-quart baking dish.
  10. Add eggplant, pepper and onion mixture into baking dish.
  11. Mix cheeses together.
  12. Sprinkle cheese mixture on top of eggplant mixture.
  13. Bake in oven for 15-minutes or until cheese has melted.
  14. Serve and enjoy.
