Ingredients:

Directions:

  1. Cut potatoes in half,add to a pan of boiling water or steam them,until soft,about 15 mins.
  2. Meanwhile, fry the bacon until crispy;take out of pan. Add peas to the frying pan and turn off heat; stir in and leave 5 mins.
  3. Drain potatoes well. Put back in pan and dry over low heat,then crush them with fork or masherbut not too finely.
  4. Snip the bacon into the potatoes and add the peas,parsley and plenty of seasoning.
  5. Form mixture into 8 small cakes,each about 3 in diameter.
  6. Heat oil in alarge frying pan. Add potato cakes and cook for 3-4 mins. on each side till heated through.
