Ingredients:

  • 1 (15 oz) container ricotta cheese
  • 4 eggs
  • 1 tbsp vanilla
  • 1/2 cup splenda
  • 1/2 tsp salt
  • sifted powder sugar

Directions:

  1. In a large bowl, beat ricotta cheese with an electric mixer on medium speed until smooth
  2. Add eggs and vanilla, beat until combined
  3. Let batter sit for 30 mins
  4. Drop batter by well-rounded tspful, four or five at a time into deep hot fat
  5. Cook 2-1/2 to 3 mins or until golden brown, turning once
  6. Remove doughnuts with slotted spoon and drain on paper towels
  7. Repeat with remaining batter
  8. Cool completely
  9. Shake doughnuts in a bag with powedered sugar or cinnamon/sugar or combo
  10. Makes about 3 dozen
