Ingredients:

Directions:

  1. Grease a 9x13-inch baking dish.
  2. In a large skillet, cook sausage, stirring occasionally, until browned, about 8 minutes.
  3. Remove from skillet; drain on paper towels.
  4. In same skillet, cook onion and bell pepper in oil, about 5 minutes.
  5. Add mushrooms; cook until vegetables are tender, about 3 minutes.
  6. Stir in spinach and cooked sausage.
  7. Pour into baking dish.
  8. Sprinkle with mozzarella cheese.
  9. To make topping: In medium bowl, whisk together flour, milk, melted butter, beaten eggs and Parmesan cheese until smooth.
  10. Pour over filling in baking dish.
  11. Bake at 400 degrees for 35 to 40 minutes or until golden brown.
  12. Makes 8 to 10 servings.
