Irish Sticky Carrots With Whiskey-Ginger Glaze

Ingredients:

  • 1/2 tsp black pepper
  • 2 tsp sea salt
  • 1/4 cup peanut oil
  • 3 tbsp butter
  • 4 large carrots
  • 1/4 inch piece ginger
  • 1/2 cup chicken stock

Directions:

  1. Peel carrots and slice into 1/2 inch circles.
  2. Peel ginger and cut into matchstick sized strips.
  3. Combine sugar, pepper, and salt.
  4. Heat the oil and half of the butter in a large skillet.
  5. Add the carrots and sprinkle with sugar mixture.
  6. Cook 3 minutes.
  7. Turn slices with tongs.
  8. When browned on both sides and starting to blacken at the edges transfer carrots to a plate.
  9. Clean skillet with a paper towel.
  10. And ginger and cook 2 minutes.
  11. Add to the carrots.
  12. Add remaining butter, whiskey and stock bring to a boil and cook 3 minutes until syrupy.
  13. Return carrots and ginger to skillet and mix well with syrup.
