Ingredients:

  • for the irish
  • 2 cups flour
  • 1 1/2 cups sugar
  • 1/4 tsp salt
  • 5 oz. bittersweet chocolate ,coarsley chopped
  • 1/2 cup oil
  • for the topper
  • 1 tbsp instant coffee granules...dissolved in 2 tbsp irish cream liqueur

Directions:

  1. ~For the Irish~
  2. Butter and flour tube pan.
  3. Mix the flour,sugar,baking powder,and salt int a bowl.
  4. Melt the chocolate with the oil,liqueur,and coffee granules in a double boiler,over barely simmering water.
  5. Transfer to a large bowl and beat in the egg yolks with a wooden spoon,until well blended.
  6. Add the dry ingredients and sit until smooth.
  7. Beat the egg whites until stiff peaks form.
  8. Fold very gingerly into the batter.
  9. Spoon into prepared pan.
  10. Bake at 350 degrees until firm to the touch and slightly sugary crust had formed,about 30 will do,but you may have to gone another 10 minutes.
  11. Cool cake in pan for 15 minutes.
  12. Turn out on rack to coo completely.
  13. ~For the Topper~
  14. Beat the coffee mixture and butter into the confectioners sugar until the frosting is thick and spreadable.
  15. Spread over the top and sides of the cake.
  16. ~To serve~
  17. Place 3 glasses per person on 6 plates.Pour a shot of Irish Cream into one glass...a shot of espresso coffee into another.
  18. In a tall stemmed glass,place one scoop of homemade rich chocolate ice cream,placing that in the center of the plate with the shots of Irish Cream and espresso coffee.
  19. If you would like, you may throw a few chocolate covered coffee beans around the glasses on the plate as well.
  20. Now...slice a generous portion of 'The Irish'...placing it on a seperate plate,that you have lined with a paper white lace doilie.
  21. Let each guess choose how they wish to pour which shot over their ice cream...as for me...I pour the Irish Cream over the Chocolate Ice Cream,and then drink the shot of espresso,taking a bite of the Irish in between.
  22. ~Place this before them with your best smile...and warmest welcome...and enjoy~
