Ingredients:

  • 1 2/3 cups cornmeal
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup chopped onion
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • reserved vegetable oil

Directions:

  1. Combine cornmeal, flour, baking powder, salt, pepper, and onion in a medium mixing bowl; add milk, 1/4 cup vegetable oil, and eggs, stirring well.
  2. Carefully drop batter by tablespoonfuls into deep hot oil (375°), cooking only a few at a time. Fry 3 minutes or until hush puppies are golden brown. Drain well on paper towels. Serve immediately.
