Honey Walnut Pumpkin Bread

Ingredients:

  • 1 tsp cornstarch
  • 1/4 cup oat bran (or wheat germ)
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 6 tbsp sugar
  • 1/3 cup canola oil
  • 1/3 cup buckwheat honey (or regular)
  • 1/3 cup soy milk (or regular)
  • 1-1/4 cup canned pumpking puree
  • 1 egg

Directions:

  1. Preheat oven to 350°F.
  2. Grease an 8-inch loaf pan lightly with canola oil and set aside.
  3. In a large bowl, combine the Dry Ingredients.
  4. In a second large bowl, combine Wet Ingredients.
  5. Add the Wet to the Dry and stir until just combined.
  6. Fold in Walnuts.
  7. Pour batter into prepared loaf pan and bake until cooked through and a toothpick inserted in the middle comes out clean, about 1 hour or so.
  8. Cool for 15 minutes on a wire rack then remove from pan and set aside to let cool completely.
