Ingredients:

Directions:

  1. In a large bowl, combine the juice of 1 lemon and chopped apples; toss to coat to prevent browning.
  2. Drain pineapple chunks, reserving 3/4 cup juice.
  3. Wash, drain and dry blueberries.
  4. Add pineapple chunks, mandarin oranges, kewi slices, and blueberries to apples.
  5. In a small bowl, combine reserved 3/4 cup pineapple juice, honey, juice of remaining 3 lemons, and olive oil; whisk well.
  6. Pour over fruit mixture, and toss gently to coat.
  7. Cover and refrigerate until serving time.
  8. If desired garnish with additional kiwi slices and blueberries.
