Honey Glazed Sweet Potato and Apple Casserole

Ingredients:

Directions:

  1. Roast potatoes in 400 oven for 40-50 minutes, until firm/tender.
  2. Cool.
  3. Peel potatoes and cut them into 1/4 inch thick slices.
  4. Peel, halve and core apples.
  5. Cut apples into 1/4 inch thick wedges and toss into a bowl with the lemon juice.
  6. Grease a 3-3 1/2 quart casserole with 1 Tbsp of the butter.
  7. In a microwave safe bowl, combine honey, remaining butter, apple juice concentrate, allspice and salt.
  8. Heat on high for 1 minute or until butter melts.
  9. Stir to combine.
  10. Heat oven to 375.
  11. Cover bottom of casserole with potato slices.
  12. Top with a layer of apple slices.
  13. Drizzle with half of the honey mixture.
  14. Alternately arrange potato and apple slices on top, overlapping to fit.
  15. Drizzle with remaining honey mixture.
  16. Using a bulb baster, baste with honey mixture in bottom of casserole several times during baking.
  17. Bake 40 minutes or until apples are tender.
  18. Turn on broiler.
  19. Broil 4-6 inches from heat sorce 2 minutes or until edges of apples are golden.
