Sweet Potato And Banana Casserole

Ingredients:

  • 4 - medium sweet potatoes
  • 6 - tbsp butter
  • 1-1/2 tsp salt
  • 1/2- 1 - tsp cinnamon
  • 3/4 - cup brown sugar
  • 3/4 - cup orange juice

Directions:

  1. Cook the sweet potatoes in boiling water until tender but still firm.
  2. Cool..........
  3. Peel and slice 1/4 inch thick
  4. Place in a buttered casserole dish in alternate layers, dotted with butter and sprinkled with salt ,with bananas sprinkled with cinnamon and brown sugar.
  5. End the top layer with bananas, dotted with butter.
  6. Add orange juice.
  7. Bake in a 350 degree oven for about 30 minutes or until top is browned.
  8. Makes 6 servings
  9. Note i put some pecans on top of the one i made it was very good
