Homemade Corn Tortillas

Ingredients:

  • 2 cups flour
  • 2 eggs
  • 2 tsp salt
  • 2 1/2 cups water (add more if necessary)

Directions:

  1. Using electric mixer, mix all ingredients together.
  2. Heat griddle to medium heat.
  3. Spray griddle with mist of oil.
  4. Using 1/2 cup measuring cup, fill about 2/3 full with batter.
  5. Spread batter out onto griddle with spoon.
  6. Cook 2 minutes on each side.
