Ingredients:

  • 6 large eggs
  • 1 lb bacon
  • 4 cups cooked grits
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup milk

Directions:

  1. Cook grits according to directions to get four cups of cooked grits, (I use half water and half milk and a half a stick of butter (not margarine).
  2. Cook bacon til crisp, making sure not to overcook.
  3. Crush bacon and place in bowl.
  4. Pre-heat oven to 350F.
  5. In a 2 quart baking dish, spread grits in bottom evenly, sprinkle crumbled bacon and cheese evenly over the top.
  6. In separate bowl whisk eggs, milk, salt and pepper, and minced onion.
  7. Pour over grits, bacon and cheese.
  8. Bake for 10-15 minutes until inserted knife comes out clean, sprinkle with more cheese and melt if desired.
