Directions:

  1. Brown Ground Beef in 5 qt saute pan. While meat browns, add Onion, Mushrooms, and eggplant. When meat is browned, add tomatoes and sprinkle with Kosher salt and pepper. Simmer for 15-20 minutes, or until eggplant is tender.
  2. Eat and Enjoy!
