Halibut Topped With Olives, Arugula, and Cottage Cheese

Ingredients:

  1. Coarsely chop the olive and the arugula. Combine the cottage cheese, arugula, garlic, and pepper. Mix well and adjust the seasoning with salt. Cover the fish fillets with a layer of the mixture.
  2. Preheat broiler.
  3. Heat a heavy ovenproof skillet over low-medium heat. Add olive oil and chopped onions. Cook until the onions are soft, but not browned. Add wine and bring to a boil.
  4. Place fish fillets in the pan. Place under broiler for 7-10 minutes.
  5. Remove fillets from pan, sprinkle with a bit of the cooking liquid, garnish with lemon slices, and serve!
