Ingredients:

  • 4 medium zucchini (about 1 1/2 lb)
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cut 4 medium zucchini (about 1 1/2 pounds) diagonally into 1/2-inch-thick slices. Brush with 2 tablespoons olive oil; sprinkle with 1 teaspoon oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Grill 6 minutes or until tender, turning occasionally.
