Grilled Tomato Bruschetta

Ingredients:

Directions:

  1. Heat grill to medium-high power.
  2. Lightly oil the grates.
  3. In a large bowl, toss tomatoes with a tablespoons of oil.
  4. Season generously with salt and pepper.
  5. Now, place tomatoes on the grill, cut side down.
  6. Cover and grill until soft and charred.
  7. This takes 5-10 minutes per side.
  8. Transfer tomatoes back to a bowl with the aid of a metal spatula.
  9. Snip tomatoes into smaller pieces once cool enough to handle using a pair of kitchen shears.
  10. Add garlic, vinegar and red pepper flakes to tomatoes.
  11. Season with more salt and pepper.
  12. Brush 4 slices of thick country bread with remaining oil.
  13. Grill on medium heat on both sides until beginning to char. This takes about 2 minutes per side.
  14. Cut bread slices in half.
  15. Divide the tomato mixture evenly over the top of each slice.
  16. Top with basil and serve immediately.
  17. Enjoy!
