Grilled Salmon With Lime Ginger Butter

  1. Preheat the grill for 10 minutes to medium high heat. Clean and oil grates.
  2. Toast the whole coriander and fennel seeds in small skillet over medium heat for 1 -2 minutes, until fragrant. Spoon the seeds from the skillet into a spice grinder and grind to a coarse powder. Place in a small bowl and stir in the ginger, paprika, salt, and cayenne pepper.
  3. Lightly sprinkle the dry rub evenly over the salmon and marinate for 15 minutes at room temperature. Reserve any remaining rub for another use.
  4. In a small saucepan melt the butter. Remove from the heat and add the lime zest, lime juice, and cilantro. Season to taste with salt and pepper.
  5. Gently brush the salmon with olive oil. Place on the preheated grill, skin side down and grill for 4 minutes. Using a spatula, gently turn the fillets over and baste with lime cilantro butter. Continue grilling, another 4 minutes. Fillets will be medium rare at this point. Cook a minute or two longer on each side if you prefer your salmon more well done. Remove from grill and baste again with flavored butter.
